Cherry-coconut slice

I love the combination of cherry & coconut and am always trying to replicate the sensation of a dark Cadbury Cherry Ripe. This one is like the inside of a cherry ripe, but clean tasting, gut-friendly and its sugar-free but still delicious. The only sweetness is from the dried cherries.



Ingredients

  • 1.5 dl dried cherries (sweet or sour cherries)

  • 2.5 dl desiccated Coconut

  • 2 tbsp psyllium husk

  • 2 dl water (or more if needed).


Method

  1. Whiz the dried cherries and desiccated coconut together in a blender, or alternatively, hack the cherries finely with a knife.

  2. Transfer to a small saucepan together with the psyllium husk and water. Heat gently to solubilise the psyllium and combine. It should start sticking together and be 'jelly-like'. Add more water if needed.

  3. Transfer to a ceramic or glass container/baking tray lined with baking paper/silicon paper, score into squares and freeze (you can cut into squares after freezing if you prefer).

  4. Transfer to a separate container and keep in the freezer.


Tip: you could always dip these in melted 70-85% chocolate if you want a real Cherry-ripe sensation, but as it is, its a refreshing snack, with excellent soluble fibers to feed your good gut-bugs who will kindly convert them to gut nourishing short-chain fatty acids.
