Every now and again I invest the time to try to copy a Cadbury Cherry Ripe. Something I ask family to bring me whenever they visit from Australia. Here is my version. The bonus making it myself is that it is refined-sugar-free.
Ingredients
225g packet of frozen cherries
2 dl desiccated coconut
1-2 tsp agar powder (or 2-3 tsp psyllium husk)
100g dark chocolate (70-85%)
2 tbsp agave syrup, maple syrup or honey
1 tbsp coconut oil
1 tbsp powdered berry (optional)
Method
Melt the cherries in a small saucepan on low heat. Add the coconut and stir through, breaking up the cherries a little. When warm, add1 dl of the syrup, agar or psyllium husk. Let sit 5min.
Spread into a rectangular ceramic baking dish on a piece of baking paper.
Transfer to freezer for ~30min. Score into rectangles and return to freezer.
Melt chocolate together with the coconut oil 1 tbsp syrup, 2 tbsp cacao and chocolate broken into pieces (in a glass bowl over warm water). Stir occasionally until melted
Remove frozen cherry-coconut pieces from the freezer and separate pieces slightly, still on the baking paper.
Drizzle half the melted chocolate over the top side of the chocolate, spreading with a spatula to cover.
Wait a minute or two for the chocolate to solidify on the top, then flip pieces and cover the other side with remaining chocolate.
Sprinkle with berry powder if you like!
Store in the freezer and remove 5-10 min (or however long you can wait) before consuming.
