Sweet potato nice cream

Makes 4 small servings Requires food processor or powerful high-speed blender. Ingredients: 1 medium sweet potato baked in slices and frozen 1 medium banana, sliced and frozen 1 medium banana refrigerated 1 tbsp peanut or almond butter

1 tbsp lemon juice (optional) Method Allow frozen sweet potato and frozen banana to thaw slightly ~5-10min at room temp. Blend refrigerated banana together with almond butter until smooth. Add frozen banana and sweet potato, blend until smooth, then add remaining frozen ingredients and pulse blend with occasional stirring until smooth like ice cream. Can be returned to freezer 30min if it is too runny, or you want to make it in advance.

Tip: Upscale the proportion of sweet potato to banana (1:1 is great), and adjust more or less peanut/almond butter to taste. For adults, try adding rind of an organic lemon.
